I just took a look at our credit card statement from last month and cripes! So now I am on a mission to save money this month, and since I think a big ton of the bill is from eating out, I have declared we are eating in all month (yeah, we'll see how that goes, since I have made statements like this many times before). Good thing I have collected a bunch of freezer meal recipes through pinterest since today I am going to start giving them a try! I decided it was a good idea to try each recipe and make sure we like it before I go off and freeze a ton of meals of it, though. Smart thinking, huh? Apparently I am on it today.
I think I will tell y'all what we think of the recipes here this month, so you can freeze along with me if you want! I figure it will be healthier, easier, and cheaper than my normal "oh crap it is 5pm, what are we doing for dinner?!!" routine. Plus, we all want to save money so we can spend it on yarn, right?
Tonight we are starting with Chicken and Black Bean Chili from here. I have copied the recipe for you here:
Chicken & Black Bean Chili (made 4 - 4C bags)
4 chicken breasts - boiled & shredded
56oz tomato sauce
30oz black beans
30oz corn
2 onions - diced
4 stalks of celery
2 packets chili seasoning
garlic
Chop everything up, throw it in a pot/crock pot and let it simmer for an hour or two.
Ok, can do. I am going to quarter the recipe just for tonight's dinner though. I might add red pepper, too, since we got some in our veggie delivery yesterday. And I will probably add more onion. Since I am like that. I also have some of this cornbread in the freezer already, so I will pull that out to go with. And we'll do it with salad, since I have a bunch from veggie delivery. And the best part? I have everything but the chili seasoning. Huzzah! So I am going to kill 2 birds with one stone, and walk to the grocery store to look for low sodium chili seasoning and get my exercise in all at once. Go me. Man, I really am on it today.
I am going to be trying most all of her recipes from the same link this week, so I will let you know what I think next week! And you can dig through my pinterest board for more ideas if you are interested in freezer mealing it with me. And, if you have freezer meal suggestions for me, let me know! Woo! I'm excited now! Thank you blog for making me accountable and actually excited about cooking.

I also have played around with the oodles of free freezer recipes on onceamonthmom.com - it will generate grocery lists, meal planning and allow for special dietary needs but best of all? You just do one (technically one and a half) crazy balls-to-the-wall cooking day per month and put it all in the freezer for the rest of the month. I can totally dig that.
